Mushroom Stir-Fry
A simple and savory stir-fry featuring fresh mushrooms.
Ingredients
2 cups mixed fresh mushrooms (Oyster, Lions Mane, Chestnut)
1 tbsp vegetable oil
1 medium onion, thinly sliced
2 cloves garlic, minced
1 bell pepper, sliced
1 small zucchini, sliced
2 tbsp soy sauce or tamari
1 tbsp oyster sauce (optional)
1 tbsp rice vinegar
1 tsp sesame oil
1 tsp ginger, grated
1 tbsp sesame seeds (optional)
Fresh herbs (cilantro or green onions) for garnish
Instructions
Prepare the mushrooms: Clean and slice the mushrooms into bite-sized pieces.
Heat the oil: In a large skillet or wok, heat vegetable oil over medium-high heat.
Cook the onions and garlic: Add sliced onions and minced garlic to the pan. Stir-fry for 2 minutes until fragrant.
Add the mushrooms: Add sliced mushrooms to the pan and cook for 5-7 minutes, stirring occasionally, until soft.
Add vegetables: Add sliced bell pepper and zucchini. Stir-fry for 2-3 minutes until vegetables are tender but still crisp.
Add sauces: Stir in soy sauce, oyster sauce (optional), rice vinegar, and sesame oil. Cook for 1 more minute.
Garnish and serve: Remove from heat and garnish with sesame seeds, cilantro, or green onions. Serve over rice or noodles.
