Mushroom Stir-Fry

A simple and savory stir-fry featuring fresh mushrooms.


Ingredients

  • 2 cups mixed fresh mushrooms (Oyster, Lions Mane, Chestnut)

  • 1 tbsp vegetable oil

  • 1 medium onion, thinly sliced

  • 2 cloves garlic, minced

  • 1 bell pepper, sliced

  • 1 small zucchini, sliced

  • 2 tbsp soy sauce or tamari

  • 1 tbsp oyster sauce (optional)

  • 1 tbsp rice vinegar

  • 1 tsp sesame oil

  • 1 tsp ginger, grated

  • 1 tbsp sesame seeds (optional)

  • Fresh herbs (cilantro or green onions) for garnish

 

Instructions

  1. Prepare the mushrooms: Clean and slice the mushrooms into bite-sized pieces.

  2. Heat the oil: In a large skillet or wok, heat vegetable oil over medium-high heat.

  3. Cook the onions and garlic: Add sliced onions and minced garlic to the pan. Stir-fry for 2 minutes until fragrant.

  4. Add the mushrooms: Add sliced mushrooms to the pan and cook for 5-7 minutes, stirring occasionally, until soft.

  5. Add vegetables: Add sliced bell pepper and zucchini. Stir-fry for 2-3 minutes until vegetables are tender but still crisp.

  6. Add sauces: Stir in soy sauce, oyster sauce (optional), rice vinegar, and sesame oil. Cook for 1 more minute.

  7. Garnish and serve: Remove from heat and garnish with sesame seeds, cilantro, or green onions. Serve over rice or noodles.
